Spinach Liver
2 cups cooked spinach
1 lb pork or veal liver
1/2 lb bacon
4 hard boiled eggs
1/4 lb cheddar cheese
2 cups white sauce
butter, onions
Cook and drain spinach, salt & pepper. Dot with butter.
Fry liver and bacon with some onion if desired.
Place bacon in baking dish add liver and cover with spinach.
Add white sauce and sliced eggs. Cover with slices of cheese.
Put in hot oven to melt cheese. Serve with mashed potatoes and slices of tomato.
