Spinach Sauce

1 pkg spinach
1 1/2 cups water
1/2 medium onion chopped fine
2 tbs margarine or butter
2 tbs flour
1 clove garlic, minced (optional)
1 egg slightly beaten
salt and pepper

Wash and cook spinach until tender about 8 minutes.
Drain, saving water for sauce and chop fine.
Melt the butter in a saucepan. Add onion and cook until lightly brown.
Add flour and continue cooking and stirring until mixture is smooth and browned.
Add chopped spinach and water it was cooked in and bring to boiling point.
Quickly stir in egg and simmer for a few minutes. Add salt and pepper to taste.
If desired, minced garlic is added with chopped spinach. Serve hot.
