Spinach Roll Ups- Pancakes
1 cup milk
1 egg
1 tbs melted shortening or butter
1 cup pancake mix
*SPINACH FILLING*
3 cups cooked spinach
1 tbs finely chopped onion
1 tsp salt
Tomato sauce
1 can condensed cream of tomato soup
1/4 cup milk
1 cup cubed sharp cheese
Beat together milk, egg and shortening, pancake mix and beat until smooth.
Pour on a lightly greased griddle to make 6 pancakes.
Bake to a golden brown, turning only once.
Combine spinach filling ingredients. Place a cross centre of each pancake and roll up.
Place in a shallow dish. Heat ingredients for tomato cheese sauce over low heat and melt cheese.
Pour sauce over rolled up pancakes and bake in a moderate oven 15-20 minutes and serve at once.
