Zesty Egg & Spinach
1 pkg Spinach
6 eggs
1/4 tsp chili powder
2 tbs butter
1/4 cup milk
1/4 tsp pepper
1 tsp salt
1 cup tomato soup
Preheat oven to 375*.
Boil spinach until tender and drain well.
Melt 2 tbs butter in a frying pan and add the 6 eggs, beating after each addition.
Add the milk and scramble the eggs until smooth.
Add 1/4 tsp. chili powder, 1/4 tsp. pepper and tsp. salt.
Remove from heat and put the egg in a casserole dish.
Add the tomato soup and stir well.
Drain the spinach and add it to the egg mixture.
Mix evenly and then sprinkle with paprika. Serve hot.
