Spinach Timbales

Cook 1-2 pkgs. spinach 1 to 3 minutes. Drain and chop fine.

Add - 3 eggs slightly beaten
1 cup milk
1/4 tsp. salt
1/4 tsp. pepper
2 tsp. vinegar
1 tsp. grated onion

Pour into greased custard cups 3/4 full. Set in pan of hot water.
Bake in moderate oven 350* 25 to 30 minutes until firm.
Serve with Hollandaise, white or egg sauce, or cheese sauce.
